Many people purchase a cup of coffee from a coffee shop daily. These cups of coffee can cost $1.50-$5.00, depending on where they are bought. If you calculate that for the year, the cost of purchasing a coffee at a coffee shop everyday can cost you $547.50-$1,825. Many people are looking for ways to save money, and there is an easy way to save money at home. If you make a 6oz. cup of Doi Chaang Coffee at home it will only cost $0.67 plus, if you choose, the cost of milk and sugar. You could save hundreds of dollars every year by making your own coffee at home.

Some people say that they do not have the time to make their own coffee every morning, but how much time is spent waiting in line at the coffee shop? To make a cup of coffee at home you only have to factor in the time it takes to grind the beans, measure the coffee, and turn on the coffee maker; the coffee can brew while you are getting ready for your day.

You can also help protect the environment by making your coffee at home. What is Civet Coffee?

Civet Coffee, or Kopi Luwak, is one of the rarest and most expensive coffees in the world. Doi Chaang Coffee is able to offer a limited supply of this delicacy. What makes Civet Coffee so rare is that the beans have been passed through the digestive system of a Civet. The digestive enzymes of the Civet affect the proteins in the coffee beans. The beans are still covered with some of the inner layers of the coffee cherry once they have passed through the Civet. After the beans have been collected, they are thoroughly washed, sundried, and then given a medium-light roast.

What Makes Doi Chaang Civet Coffee Special?

As the demand for Civet Coffee has increased some farmers have started to cage civets and force feed the civets coffee cherries. This has led to animal cruelty allegations and put the integrity of Civet Coffee at risk. In Doi Chang Village the Civets roam freely throughout the mountain. When a Civet is in the wild it will chose the ripest coffee cherries. By using only wild civet beans Doi Chaang ensures that the best beans are being used to make the coffee. Also, because only Arabica beans are grown in Doi Chang Village, Doi Chaang Wild Thai Civet is 100% Arabica.

Hello my little coffee lovers,

It’s that time again to answer another one of your questions!

Question: “How do I properly store my coffee?”

This is a great question. More often than not I hear about incorrect storing techniques that lead to the breakdown of coffee, leaving it stale and for lack of a better word… gross.

Do NOT freeze your coffee. Back away from the freezer.

Coffee beans are afraid of 3 things when it comes to storage:

1. Moisture

2. Heat

3. Light

If you put a coffee bean under a microscope you will notice a couple of things.

- It has oil on it. This is brought out in the roasting process and gives the beans their distinct flavor… you don’t actually need a microscope to see this… but it could be a fun activity on a rainy day.

- It’s POROUS… you do need a microscope to see this!

If you freeze a coffee bean, bad things are scientifically and Morgantifically proven to happen,

a. The freezing process will deteriorate the oils on the beans, leading to a loss of freshness and flavor

b. Moisture will enter into the beans porous little body and be frozen, breaking down the physical quality of the bean.

c. The pores of the bean will pick up any odors that are present in your freezer. Nobody should ever have to drink coffee that tastes like chicken!

Store Coffee in an Airtight Container Placed in a Cool, Dry, Dark Place

When you open your bag of coffee put it in an airtight container.

Place this container in a cool, dry and dark place. NOT THE FRIDGE OR FREEZER!

Grind only what you need!!!

Grind what you’re going to use immediately and store the remaining whole beans.

Grinding breaks up the beans AND their oils which means regardless of storage, ground coffee will go stale and heck of a lot faster than whole beans.

Buy an appropriate amount of coffee. If you don’t drink coffee often, don't buy a 2 or 5 pound bag – by the time it’s done it will be too stale to enjoy.

Beyond Fair Trade – What does it mean?

Doi Chaang Coffee goes “Beyond Fair Trade™”. This term needs some more explanation as it’s quite common for individuals to not fully understand its meaning. Luckily I’m having some computer issues so I’m going to take this time that was allocated for something else and explain “Beyond Fair Trade™” to you instead!

Being North America’s only 100% Arabica, Fair-Trade, Certified Organic, Single-Origin, Thai coffee is quite an achievement. That being said, it’s only a small part of what makes Doi Chaang Coffee. The real story of Doi Chaang Coffee Co. has far more to do with passion, selflessness, understanding, knowledge, and growth.

In order to correctly explain what “Beyond Fair Trade™” means, I have to explain what Fair Trade means. I’m not going to go into depth here because one could right a never-ending paper on Fair Trade. The barebones of it is that farmers are paid a minimum wage that is set out by the Fair Trade Organization. Companies who are Fair Trade Certified are only required to meet these minimum guidelines.

Doi Chaang Coffee is produced in Northern Thailand. The farmers are from the Akha hill tribe and reside in Doi Chang Village. The Akha people’s history is a huge part of the Doi Chaang story.

In 1983 the King of Thailand started an initiative to improve the quality of life of Thai hill tribe people. Thus, the Royal Development Project was born. Opium production was a large problem in Thailand and the Royal Development Project decided to implement “Slash and Burn Farming” to get rid of the opium. As a replacement for opium, farmers were given other economically sustainable plants such a macadamia trees, plum trees, other assorted fruit trees, and coffee plants.

Most Akha people were born in the mountains, which means they’re not allowed to have a Thai ID card. This means that they’re not allowed to go down into the city, which by default means that they were (for lack of a better word) “banished” by society to the mountains to live with almost nothing.

The Akha people have no written language and speak their own language. They were living in mountains with no health care, sparse electricity and no running water.

John M. Darch was involved in the mining industry for over 25 years and was ready to retire. He met Wicha Promyong (The president of Doi Chaang Coffee Original) and was so moved by the story of the Akha people that he decided to help them.

For John M. Darch, the minimum set by the Fair Trade Organization was not enough. Instead of giving the farmers a minimum wage for their hard work, it was decided that instead, they should keep 100% of the proceeds from the sale of their green beans.

In addition to that, in appreciation of their contribution to the venture and the desire to improve the Thai farmers’ living standards, Doi Chaang Coffee Co. “gifted” the Thai farmers a 50% registered ownership in the small, family owned, Vancouver based, Doi Chaang Coffee Co., which is funded 100% by the Darch family.

In short, farmers keep 100% of the proceeds from the sale of their green beans, the farmers also own 50% of the Canadian company, “Doi Chaang Coffee Co.” which is funded 100% by John M. Darch and his family. That’s what we consider to be “Beyond Fair Trade™”

The benefits of “Beyond Fair Trade™” are starting to show in the village. They now have upgraded electricity, running water in places, and are even building a hospital! The “Doi Chaang Coffee Academy” is also a huge achievement. The school allows villagers to take classes (free of charge), taught by visiting university professors, to learn about everything from sustainable farming, to finances!

“Beyond Fair Trade™” means being truly fair to help improve the lives of people who really deserve it!

The Truth About Civet Coffee

I feel as though the time has come for me to address the many questions and comments I get regarding civet coffee… yes, the coffee that’s been shat or spat out of a civet.

Reactions to the thought of civet coffee are [not surprisingly] all over the board. That being said, I have yet to meet one person who has NOT said that civet coffee was some of the best coffee they’ve ever had in their life… once they got the guts to try it.

The myths and mystic around civet coffee are growing. A lot of it has to do with the hype surrounding it as well as the fact that it’s quite rare. Everyone has an opinion and they like to make it known. I’d like to take this opportunity to bust some myths and give you the facts about Civet Coffee (also known as Kopi Luwak due to “Kopi” being the Indonesian word for coffee and “Luwak” being the local Asian palm civet)

Civet Coffee is increasingly being called “Civet Cat Coffee.” The civet is NOT a cat. The civet is a small mammal that resembles a cat but is actually more related to the mongoose.

Civets eat only the ripest and finest coffee berries for their pulp. While the berries are in the civet’s stomach, proteolytic enzymes enter into the beans and then the properties of said bean are changed. This means that there is a chemical reaction that causes the beans to have less bitterness (due to protein breakdown) than a normal coffee bean.

After being passed or spat from the civet’s digestive tract, farmers gather the beans and process them. The processing of civet beans is as follows:

- Passed/Spat beans are gathered
- Beans are thoroughly washed
- Beans are sun dried
- Beans are roasted

The university of Guelph recently did a study that showed “Civet beans are typically extensively washed under running water after collection, which dislodges bacteria” and there was no health threat in drinking the coffee (also remember roasting introduces high heat which will kill bacteria!) So gone is the terror of drinking poop! These beans have no poop on them at all!

The next issue I’d like to address is that of animal cruelty. Unfortunately it’s quite common for some companies to cage and force feed their animals. This introduces a whole new problem in (besides the fact that it’s just wrong!) the civet’s are eating berries that they’re being force fed, they’re not finding the ripest berries themselves. They could be eating (and probably are eating) mediocre berries that they would not eat in their natural habitat.

Doi Chaang Coffee Company has made a name for itself in North America and now Europe (recently being listed in Harrods) for their civet coffee. When people pick up a tin of Doi Chaang civet coffee they will read that the label says “Authentic Wild Thai Civet Coffee” without fully understanding what that means. What it means is that at NO time does Doi Chaang Coffee Company ever cage or force-feed the civets. Doi Chaang Coffee has a large coffee plantation in Thailand where the civets roam freely and the beans are collected as they’re found. Due to this, Doi Chaang Coffee also has a VERY limited supply of the coffee.

Another issue I’m constantly running into is people saying that Civet Coffee (Kopi Luwak) is only from one certain area. This is not the case either. Legitimate Civet Coffee is being produced in Sumatra, Bali, Java, Sulawesi, Thailand, East Timor, and the Philippines.

Due to the rarity of civet coffee the price of it is much more than your average cup of coffee. It sells for between $200 - $600/pound or $40 - $80/cup where it is served!

Vancouver, BC has become the first city in Canada to to be certified for Fair Trade Town status!
What does this mean? Well I'll tell you! This means that Vancouver will buy coffee, tea, sugar, produce and other consumer products that are Fair Trade Certified.

Coffee as a Health Drink? Studies Find Some Benefits

Coffee is not usually thought of as health food, but a number of recent studies suggest that it can be a highly beneficial drink. Researchers have found strong evidence that coffee reduces the risk of several serious ailments, including diabetes, heart disease and cirrhosis of the liver.

Among them is a systematic review of studies published last year in The Journal of the American Medical Association, which concluded that habitual coffee consumption was consistently associated with a lower risk of Type 2 diabetes. Exactly why is not known, but the authors offered several explanations.

Coffee contains antioxidants that help control the cell damage that can contribute to the development of the disease. It is also a source of chlorogenic acid, which has been shown in animal experiments to reduce glucose concentrations.

Caffeine, perhaps coffee’s most famous component, seems to have little to do with it; studies that looked at decaffeinated coffee alone found the same degree of risk reduction.

Larger quantities of coffee seem to be especially helpful in diabetes prevention. In a report that combined statistical data from many studies, researchers found that people who drank four to six cups of coffee a day had a 28 percent reduced risk compared with people who drank two or fewer. Those who drank more than six had a 35 percent risk reduction.

Some studies show that cardiovascular risk also decreases with coffee consumption. Using data on more than 27,000 women ages 55 to 69 in the Iowa Women’s Health Study who were followed for 15 years, Norwegian researchers found that women who drank one to three cups a day reduced their risk of cardiovascular disease by 24 percent compared with those drinking no coffee at all.

But as the quantity increased, the benefit decreased. At more than six cups a day, the risk was not significantly reduced. Still, after controlling for age, smoking and alcohol consumption, women who drank one to five cups a day — caffeinated or decaffeinated — reduced their risk of death from all causes during the study by 15 to 19 percent compared with those who drank none.

The findings, which appeared in May in The American Journal of Clinical Nutrition, suggest that antioxidants in coffee may dampen inflammation, reducing the risk of disorders related to it, like cardiovascular disease. Several compounds in coffee may contribute to its antioxidant capacity, including phenols, volatile aroma compounds and oxazoles that are efficiently absorbed.

In another analysis, published in July in the same journal, researchers found that a typical serving of coffee contains more antioxidants than typical servings of grape juice, blueberries, raspberries and oranges.

“We were surprised to learn that coffee quantitatively is the major contributor of antioxidants in the diet both in Norway and in the U.S.A.,” said Rune Blomhoff, the senior author of both studies and a professor of nutrition at the University of Oslo.

These same anti-inflammatory properties may explain why coffee appears to decrease the risk of alcohol-related cirrhosis and liver cancer. This effect was first observed in 1992. Recent studies,published in June in The Archives of Internal Medicine, confirmed the finding.

Still, some experts believe that coffee drinking, and particularly caffeine consumption, can have negative health consequences. A study published in January in The Journal of the American College of Cardiology, for example, suggests that the amount of caffeine in two cups of coffee significantly decreases blood flow to the heart, particularly during exercise at high altitude.

Rob van Dam, a Harvard scientist and the lead author of The Journal of the American Medical Association review, acknowledged that caffeine could increase blood pressure and slightly increase levels of the amino acid homocysteine, possibly raising the risk for heart disease.

“I wouldn’t advise people to increase their consumption of coffee in order to lower their risk of disease,” Dr. van Dam said, “but the evidence is that for most people without specific conditions, coffee is not detrimental to health. If people enjoy drinking it, it’s comforting to know that they don’t have to be afraid of negative health effects.”

He has lived in the country and over the years, has photographed many of the historic wonders found within the Kingdom. His specialty has been documenting, through photography, the colorful, multi-ethnic hill tribes that reside in the notorious, Golden Triangle regions of Northern Thailand. The importance of these photographs is somewhat historic, as the individual uniqueness of each of these ancient, tribal cultures is quickly changing, due to Western influences from tourism and modern technology.

Blue has also had a 40-year career in the music business and as a musician, recording artist & music manager; he has traveled throughout the world, capturing his journeys with remarkable photographs. Many of Blue's Thai photos have been published in Thailand as photo greeting cards. As a senior citizen, Blue officially retired last year and has now begun to focus on and promote his talents as a photographer. Having majored in design and the advertising arts at UCLA and Art Center College of Design, Blue was naturally drawn into creative expression, through the use of a camera. Photography and music have always been his life-long passions and Blue now aspires to exhibit his colorful images in photo-galleries while continuing to travel abroad and photograph the world.

Single-origin is a descriptive term referring to a coffee variety with a single known geographical origin. Too much, however, and you might find yourself irritable, nauseous, twitchy — or, in worst-case scenarios, suffering from an irregular heartbeat, breathing difficulties and convulsions. Researchers have also examined the possibility caffeine may cause health problems related to cholesterol, bones and cancers.

Fear not, coffee aficionados: recent studies suggest the beverage may offer a host of health benefits. Doctors are not yet recommending people increase their daily doses and Health Canada continues to recommend moderation — not exceeding a maximum of about three eight-ounce (237-millilitre) cups of brewed coffee for healthy adults. But some researchers say new evidence shows coffee's potent antioxidants can prevent the onset of some diseases. Here's a roundup of the latest scientific research.

3 cups a day curbs memory loss?

Women aged 65 and older who drink at least three cups of coffee or tea a day are less likely to suffer memory loss, according to a French study published in the August 2007 issue of the journal Neurology.

Lead researcher Karen Ritchie, of the French National Institute for Health and Medical Research, said it was premature to suggest caffeine conclusively cut cognitive decline but she noted the psychostimulant appeared to have a positive effect on the brain.

The study also found the positive effects of coffee appeared to heighten with age. Women over 80 who drank three or more cups of coffee daily were found to be 70 per cent less likely to experience memory loss over those who didn't drink coffee.

Ritchie and her team observed the caffeine intake and cognitive skills of 7,000 participants over the course of four years.

A cup of coffee, a morning run help keep skin cancer at bay, researchers say

For many people, a morning cup of coffee followed by a workout is already part of their morning schedule. The good news, according to a U.S. study published in July 2007, is that this routine may help fight skin cancer. Researchers at New Jersey's Rutgers University said their study on hairless mice found that caffeine and exercise combined appear to kill precancerous cells that have been damaged by the sun's UVB rays.

Study author Allan Conney noted the results need to be quantified in humans but said that some researchers speculate exercise and caffeine can decrease tissue fat, thereby reducing the risk of cancer.

4+ cups of coffee daily cuts the risk of gout in men over 40

About one in 30 Canadians suffer from gout, a painful arthritic condition triggered by an excess of uric acid in the joints. People diagnosed with gout — a condition without a cure — often struggle with swollen toes, ankles, feet, hands and wrists.

But new research suggests people who have not yet suffered from gout may cut the risk of developing it by consuming large amounts of coffee. Men who drink six or more cups of coffee a day are 59 per cent less likely to develop gout over those who never drink coffee, according to a study published in the June 2007 issue of Arthritis & Rheumatism.

The study, conducted, by Canadian and American researchers, also said the risk was reduced by 40 per cent in men who drank between four and five cups of coffee daily.

While researchers were unable to definitively explain why coffee curbed gout, they noted that a strong antioxidant — phenol chlorogenic acid — may in part be responsible.

The study's authors also noted that it was too early for men to immediately bump up their coffee intake. The 12-year study included 45,869 men with no history of gout.

Coffee intake tied to lower diabetes risk

Women who incorporate at least six cups of coffee into their daily diets are less likely to develop Type 2 diabetes, according to University of Minnesota researchers.

The 11-year study, published in the June 2006 Archives of Internal Medicine, found that women who drank more than six cups of coffee a day were 22 per cent less likely than those who didn't drink any coffee to be diagnosed with diabetes.

Among people who drank six or more cups of decaffeinated coffee daily, the risk was lowered by 33 per cent.

The beans' antioxidants may also help protect cells in the pancreas, where insulin is produced.

The study included 28,812 post-menopausal women in Iowa starting in 1986.

A study published in the Archives of Internal Medicine in December 2009 found that the consumption coffee and tea was associated with a lower diabetes risk among all adults.

The study was an analysis of previous studies on the topic. Among its conclusions were that each additional cup of coffee consumed in a day was associated with a seven per cent reduction in the excess risk of diabetes. People who drank three to four cups a day had a 25 per cent lower risk than those who drank between zero and two cups a day.

In addition, the study found that people who drank more than three to four cups of decaffeinated coffee a day had about a one-third lower risk of developing type 2 diabetes than those who drank none. Those who drank more than three to four cups of tea had a one-fifth lower risk than those who drank no tea.

Antioxidants lower risk of cardiovascular disease in women over 55

Potent antioxidants in coffee can help curb inflammation and lower the risk of cardiovascular disease in women, according to a 2006 U.S. study.

Researchers from the University of Oslo and the University of Minnesota followed more than 41,000 post-menopausal women between the ages of 55 and 69.

They found that including coffee in a diet appeared to help inhibit inflammation, thereby lowering risks of cardiovascular and inflammatory diseases, including arthritis.

The authors said a daily intake of between one and three coffees confirmed that the beverage offered a protective advantage.

The study was published in the May 2006 issue of the American Journal of Clinical Nutrition

Plenty of health benefits are brewing in America's beloved beverage.

Want a drug that could lower your risk of diabetes, Parkinson's disease, and colon cancer? That could lift your mood and treat headaches? That could lower your risk of cavities?

If it sounds too good to be true, think again.

Coffee, the much maligned but undoubtedly beloved beverage, just made headlines for possibly cutting the risk of the latest disease epidemic, type 2 diabetes. And the real news seems to be that the more you drink, the better.

Reducing Disease Risk

After analyzing data on 126,000 people for as long as 18 years, Harvard researchers calculate that compared with not partaking in America's favorite morning drink, downing one to three cups of caffeinated coffee daily can reduce diabetes risk by single digits. But having six cups or more each day slashed men's risk by 54% and women's by 30% over java avoiders.

Though the scientists give the customary "more research is needed" before they recommend you do overtime at Starbuck's to specifically prevent diabetes, their findings are very similar to those in a less-publicized Dutch study. And perhaps more importantly, it's the latest of hundreds of studies suggesting that coffee may be something of a health food -- especially in higher amounts.

In recent decades, some 19,000 studies have been done examining coffee's impact on health. And for the most part, their results are as pleasing as a gulp of freshly brewed Breakfast Blend for the 108 million Americans who routinely enjoy this traditionally morning -- and increasingly daylong -- ritual. In practical terms, regular coffee drinkers include the majority of U.S. adults and a growing number of children.

"Overall, the research shows that coffee is far more healthful than it is harmful," says Tomas DePaulis, PhD, research scientist at Vanderbilt University's Institute for Coffee Studies, which conducts its own medical research and tracks coffee studies from around the world. "For most people, very little bad comes from drinking it, but a lot of good."

Consider this: At least six studies indicate that people who drink coffee on a regular basis are up to 80% less likely to develop Parkinson's, with three showing the more they drink, the lower the risk. Other research shows that compared to not drinking coffee, at least two cups daily can translate to a 25% reduced risk of colon cancer, an 80% drop in liver cirrhosis risk, and nearly half the risk of gallstones.

Coffee even offsets some of the damage caused by other vices, some research indicates. "People who smoke and are heavy drinkers have less heart disease and liver damage when they regularly consume large amounts of coffee compared to those who don't," says DePaulis.

There's also some evidence that coffee may help manage asthma and even control attacks when medication is unavailable, stop a headache, boost mood, and even prevent cavities.

Reducing Disease Risk continued...

Is it the caffeine? The oodles of antioxidants in coffee beans, some of which become especially potent during the roasting process? Even other mysterious properties that warrant this intensive study?

Actually, yes.

Some of coffee's reported benefits are a direct result of its higher caffeine content: An eight ounce cup of drip-brewed coffee contains about 85 mg -- about three and a half times more than the same serving of tea or cola or one ounce of chocolate.

"The evidence is very strong that regular coffee consumption reduces risk of Parkinson's disease and for that, it's directly related to caffeine," DePaulis tells WebMD. "In fact, Parkinson's drugs are now being developed that contain a derivative of caffeine based on this evidence."

Caffeine is also what helps in treating asthma and headaches. Though not widely publicized, a single dose of pain reliever such as Anacin or Excedrin contains up to 120 milligrams -- what's in a hefty mug o' Joe.

Boost to Athleticism

It's also caffeine -- and not coffee, per se -- that makes java a powerful aid in enhancing athletic endurance and performance, says physiologist and longtime coffee researcher Terry Graham, PhD, of the University of Guelph in Canada. So powerful, in fact, that until recently, caffeine in coffee or other forms was deemed a "controlled" substance by the Olympic Games Committee, meaning that it could be consumed only in small, designated amounts by competing athletes.

"What caffeine likely does is stimulate the brain and nervous system to do things differently," he tells WebMD. "That may include signaling you to ignore fatigue or recruit extra units of muscle for intense athletic performance. Caffeine may even have a direct effect on muscles themselves, causing them to produce a stronger contraction. But what's amazing about it is that unlike some performance-enhancing manipulation some athletes do that are specific for strength or sprinting or endurance, studies show that caffeine positively enhances all of these things."

How does this brew affect growing minds and bodies? Very nicely, it seems, says DePaulis. Coffee, as you probably know, makes you more alert, which can boost concentration. But claims that it improves a child's academic performance can be exaggerated. Coffee-drinking kids may do better on school tests because they're more awake, but most task-to-task lab studies suggest that coffee doesn't really improve mental performance, says DePaulis.

But it helps kids' minds in another way. "There recently was a study from Brazil finding that children who drink coffee with milk each day are less likely to have depression than other children," he tells WebMD. "In fact, no studies show that coffee in reasonable amounts is in any way harmful to children."

On the flip side, it's clear that coffee isn't for everyone. Its legendary jolt in excess doses -- that is, more than whatever your individual body can tolerate -- can increase nervousness, hand trembling, and cause rapid heartbeat. Coffee may also raise cholesterol levels in some people and may contribute to artery clogging. But most recent large studies show no significant adverse effects on most healthy people, although pregnant women, heart patients, and those at risk for osteoporosis may still be advised to limit or avoid coffee.

The bottom line: "People who already drink a lot of coffee don't have to feel 'guilty' as long as coffee does not affect their daily life," says Hu. "They may actually benefit from coffee habits in the long run."

In other words, consume enough caffeine -- whether it's from coffee or another source -- and you will likely run faster, last longer and be stronger. What's enough? As little as one cup can offer some benefit, but the real impact comes from at least two mugs, says Graham. By comparison, it'd take at least eight glasses of cola to get the same effect, which isn't exactly conducive for running a marathon.

But the harder you exercise, the more benefit you may get from coffee. "Unfortunately, where you see the enhancing effects from caffeine is in hard-working athletes, who are able to work longer and somewhat harder," says Graham, who has studied the effects of caffeine and coffee for nearly two decades. "If you a recreational athlete who is working out to reduce weight or just feel better, you're not pushing yourself hard enough to get an athletic benefit from coffee or other caffeinated products."

But you can get other benefits from coffee that have nothing to do with caffeine. "Coffee is loaded with antioxidants, including a group of compounds called quinines that when administered to lab rats, increases their insulin sensitivity" he tells WebMD. This increased sensitivity improves the body's response to insulin.

That may explain why in that new Harvard study, those drinking decaf coffee but not tea beverages also showed a reduced diabetes risk, though it was half as much as those drinking caffeinated coffee.

"We don't know exactly why coffee is beneficial for diabetes," lead researcher Frank Hu, MD, tells WebMD. "It is possible that both caffeine and other compounds play important roles. Coffee has large amounts of antioxidants such as chlorogenic acid and tocopherols, and minerals such as magnesium. All these components have been shown to improve insulin sensitivity and glucose metabolism."

Meanwhile, Italian researchers credit another compound called trigonelline, which gives coffee its aroma and bitter taste, for having both antibacterial and anti-adhesive properties to help prevent dental cavities from forming. There are other theories for other conditions.

People who drink more coffee or tea, regardless of whether it's caffeinated, seem to have a lower risk of developing Type 2 diabetes compared with people who don't drink any of the beverages, new research suggests.

Researchers looked at 18 studies involving 457,922 participants between 1966 and 2009 on the link between coffee consumption and diabetes, including six that looked at decaffeinated coffee and seven that looked at tea.

The data was analyzed by Rachel Huxley of the George Institute for International Health, University of Sydney, Australia, and colleagues.

On average, they found that each cup of coffee per day reduced the risk by about seven per cent, after adjusting for other factors, such as age and sex.

In Monday's issue of Archives of Internal Medicine, the researchers concluded:

People who drank three to four cups per day had an approximately 25 per cent lower risk than those who drank between zero and two cups per day.
Those who drank more than three cups of decaf coffee a day had about a one-third lower risk of diabetes.
Those who drank more than three to four cups of tea had a one-fifth lower risk than those who drank no tea.

Antioxidants protective?

Since decaffeinated coffee was also associated with lower diabetes risks, the researchers speculated that other compounds in the drinks, such as magnesium or antioxidants, might be involved.

By 2025, about 380 million people worldwide will be affected by Type 2 diabetes, according to the International Diabetes Foundation.

Huxley and the other researchers said that someday, people at greatest risk for Type 2 diabetes might be advised to increase their consumption of tea and coffee in addition to becoming more physically active and losing weight, the researchers said.

Before that can happen, however, more research is needed to take into account whether tea drinkers are more health conscious than coffee drinkers in general.

And since only 20 per cent of the studies reviewed were from non-white populations, it is not known how the findings might apply to other ethnic groups.

Previous research suggested caffeine may increase susceptibility to Type 2 diabetes in people who are obese.

The latest study was supported by the National Heart Foundation of Australia, the National Health and Medical Research Council of Australia; a Research Career Development Fellowship from the U.K. Wellcome Trust; and a research grant from Institut Servier, France and Assistance Publique-Hopitaux de Paris.

A cup of coffee a day keeps the doctor away

For years coffee has endured a bad rap, but experts now say the caffeine content can actually do you some good.

Every morning Lesli Boldt starts her day with a serious cup of coffee -- a two-shot espresso with hot water. “I have one coffee a day and I want it to be a good one,” says Lesli, 35, a manager of marketing and communications for the Vancouver Public Library.

Not only does Lesli's coffee taste good, but new research suggests that it may also be good for her. Recent studies have found that drinking coffee can actually be a healthy habit, enhancing athletic performance, increasing mental alertness and protecting against serious diseases such as Alzheimer's, Parkinson's and even liver and colon cancers. “Coffee consumption fits into a very healthy diet and, if anything, may have a beneficial effect,” Dr. Eileen Madden, a toxicologist and food-safety expert, told a symposium on coffee and health last fall at the New York Academy of Sciences.

That's surprising news for most Canadians who love coffee but treat it as something of a guilty pleasure. Canadians have mixed feelings about the beverage they love to drink, says Massimo Marcone, a food scientist and adjunct professor at the University of Guelph in Ontario who has studied coffee production and consumption all over the world. “People have a preconceived idea about coffee -- they think it's bad for you,” he says.

And no wonder. Almost every day media reports tell us that consuming coffee may be associated with serious health problems, such as osteoporosis, elevated cholesterol, high blood pressure, heart disease, infertility, fibrocystic breast disease (FBD), breast cancer and even miscarriage. But, say the experts, many of those findings were based on poorly designed research and were not supported by further studies.

The benefits of coffee
If you love coffee, here's some of the latest good news.
• A study of 90,000 Japanese by the National Cancer Center in Tokyo found that people who drank one to four cups of coffee daily had half the liver cancer risk of those who never drank coffee. Researchers aren't sure why, but they speculate that antioxidants may play a role.

• A study by researchers at the Harvard School of Public Health that followed more than 125,000 men and women for more than a decade found that regular coffee drinkers had a significantly lower risk of developing type 2 (or late-onset) diabetes. Studies in Sweden and Finland also concluded that coffee consumption offers protection from type 2 diabetes. Again, researchers aren't sure why.

• A half-dozen recent international studies showed a positive relationship between drinking caffeinated beverages -- including coffee -- and lower rates of Parkinson's disease and Alzheimer's disease.

• Other research links coffee consumption with reduced risk of cirrhosis of the liver, colon cancer and asthma.

• A cup or two of coffee can improve endurance in activities such as running, cycling and swimming, according to other research. Coffee has a strong ergogenic effect, meaning it helps people work harder and longer, explains Lawrence Spriet, an exercise physiologist at the University of Guelph who has researched the effects of caffeine on athletic performance for more than a decade. "Even small amounts of caffeine can be quite powerful,” he says.

Bis Mitte der 1960er Jahren bauten die Bauern des Dorfs Doi Chaang im so genannten Goldenen Dreieck im Nordwesten Thailands Opium an. Dafür zerstörten sie mittels Brandrodung natürliche Wälder und mit ihnen wertvolle Ökosysteme.

Auf Initiative des Königs, der dem Drogenanbau ein Ende setzen wollte, wendeten sich die Bauern nachhaltigeren Produkten zu und begannen Tomaten, Kohl und andere Gemüse zu kultivieren. Dennoch verarmten sie zusehends, und die Entwaldung schritt weiter voran.

Eine weitere Initiative des Königs brachte Mitte der 1980er hochwertige Kaffeesorten zu den Bergvölkern Nordwest-Thailands. Als weitgehend rechtlose Minderheiten blieben sie in der Folge der Willkür skrupelloser Kaffeehändler ausgesetzt, so dass sich mit Kaffee keine wirkliche Existenzgrundlage entwickeln ließ.

Erst mit der Gründung ihrer eigenen Kooperative und unterstützt durch engagierte Landsleute begann Anfang des neues Jahrtausends die Erfolgsgeschichte von Doi Chaang Coffee, die seit 2006 eine internationale Fortsetzung erfährt: Zunächst konnte der Doi Chaang Coffee Experten und Liebhaber in Nord-Amerika begeistern, jetzt betritt er die Bühne der Kaffeespezialitäten auf dem Alten Kontinent.

Für als 800 Familien der unterprivilegierten Bergstämme der Akha und Lisaw bietet der Kaffeeanbau damit seit etwa sechs Jahren nicht nur eine neue Einkommensalternative, sondern trägt wesentlich zur Wiederherstellung des ökologischen Gleichgewichts der einst für den Opiumanbau stark entwaldeten Region bei.

Neben der überragenden Qualität seiner Kaffees weiß die Produzentengemeinschaft durch Selbstbewusstsein, Dynamik und ehrgeizige Ambitionen im Aufbau nachhaltiger Strukturen zu überzeugen. Eine selbst initiierte und finanzierte Kaffeeakademie und eine ständig wachsende Produktpalette sind Ausdruck ungewöhnlichen Pioniergeistes und beispielhafter Innovationsbereitschaft.

Kaffeequalität

Rohkaffee: Der Rohkaffee beeindruckt durch ein äußerst harmonisches Erscheinungsbild. Die Bohnen sind mittelgroß, sehr gleichförmig und sehr gut (nass) verarbeitet. Die Farbe der vorliegenden 2007/08-Muster entspricht einer hellen Jade. Der Geruch ist einwandfrei und gibt keinerlei hinweise auf Defekte.
Dieser Eindruck wird bei der anschließenden Analyse bestätigt. Defekte sind in beiden vorliegenden Mustern (Bohnen und Peaberries) quasi Fehlanzeige: Es ließen sich jeweils nur 3 resp. 1 gebrochene Bohnen finden! Wenn die Sackware genau so ist, dann … würden wir uns nicht darüber wundern!

Röstkaffee: Der „Coffee Review“, die Bewertungs-Institution für Röstkaffee in Nordamerika, vergab dem „Single Origin Medium Roast“ mit 90 Punkten und dem „Single Estate Peaberry Medium“ mit 93 Punkten jeweils ein „Outstanding“. In der Beschreibung des „Single Origin Medium Roast“, also recht genau der Röstung, die wir auch anbieten, heißt es: „… ein eindrucksvoll ausgewogener Kaffee. Dem Urteil können wir uns mit Überzeugung anschließen, auch wenn wir selbst dem „Single Origin Medium Roast“ 1 oder 2 Punkte mehr vergeben hätten.

Potenzial/Eignung:

Die Doi Chaang-Bohnen, das bestätigten unsere Teströstungen, sind unkomplizierte, echte Allrounder, die sich sowohl für helle als auch für dunklere Röstungen, insbesondere aber auch für eine Espresso-Röstung eignen. Mit diesen Bohnen lässt sich herrlich experimentieren.

Nachhaltigkeit

Ökonomie: In Doi Chaang hat man aus der Vergangenheit zwei Dinge gelernt: Zum einen, die Dinge selbst in die Hand zu nehmen, zum anderen, nicht nur auf ein Pferd zu setzen. Das Gemeinschaftsunternehmen verfolgt die Strategie der horizontalen, lateralen und vertikalen Diversifikation: Mehr als 6 unterschiedliche Blends und Röstungen werden angeboten. In Zukunft werden auch Beiprodukte, wie Kaffeeölextrakte für Kosmetika oder Rohkaffeepulver als Nahrungsergänzungsmittel weitere Einkommensmöglichkeiten eröffnen. Aber Kaffee ist nur ein Element eines Agroforstsystems, das auch Macadamia, Birne, Pfirsiche und bald auch Tee umfasst – die Basis für eine breite Produktpalette.

All diese Entwicklungen wären nicht möglich durch ein Maß an Eigeninitiative, Unternehmergeist und (Re-)Investitionsbereitschaft in ökonomische und soziale Infrastruktur, wie Baumschulen, Lagerhäuser oder eine Kaffeeaufbereitungsanlage.

Kaffee aus Doi Chaang – was wörtlich übersetzt soviel heißt wie Elefantenberg – verfügt innerhalb Thailands über ein inzwischen dichtes Netzwerk von mehr als 300 Partner-Shops. Aber erst seit zwei Jahren wird Doi Chaang Coffee außerhalb Thailands vermarktet. In einer einmaligen, ‚echten’ Fair-Handels-Beziehung sind die Kooperativen zu 50 % an ihrem kanadischen Tochterunternehmen, dem auch ein eigener Röstmeister angehört, und somit an der gesamten Wertschöpfungskette beteiligt. Ähnliche Modelle sind in Europa geplant. Die Registrierung von Doi Chaang als geschützte Ursprungsangabe soll auf nationaler wie internationale Ebene die Markenbildung und das Image stärken und vor Plagiarismus schützen. Deshalb wird mit den Handelspartnern vertraglich die Verwendung in Blends praktisch ausgeschlossen.

Schon heute müssen sich die Bauern von Doi Chaang die Preise weder von Zwischenhändlern, noch vom Weltmarkt diktieren lassen – sie selbst bestimmen den Preis, der zur Zeit bei mindestens 3,50 US $/Kilo liegt. Bei 300 Tonnen Jahresproduktion lässt sich damit derzeit ein Bruttoumsatz von etwa 1.250 Dollar pro Familie generieren, von denen freilich ein Teil wieder in neue Projekte investiert wird.

Ökologie: Mit der Wiederaufforstung des Elefantenberg mit mehr als 100.000 gepflanzten Bäumen jährlich übernehmen die Bauern Doi Chaang nicht nur die Verantwortung für ihre eigenen historischen Umweltsünden, sondern auch für die anderer Ethnien, die vor ihnen die Region besiedelt haben und inzwischen abgewandert sind. Die mit Schatten spendenen Pfirsich, Birn- und Macadamiebäumen angereicherten Kaffeekulturen tragen wesentlich zur Regeneration der Landschaft und Biodiversität bei. Inzwischen ist auch wieder die asiatische Zibetkatze heimisch, der Hinterlassenschaften reich an fermentierten Kaffeebohnen sind, mit denen auf Sumatra der berühmte Kopi Luwak, der teuerste Kaffee der Welt hergestellt wird.

Es versteht sich fast von selbst, dass Doi Chaang rein biologisch angebaut wird. Die verwendeten Dünger besteht zu 95 % aus kompostierter Pulpe der Kaffeekirschen, die bei der Verarbeitung anfällt. Die Kooperative mit ihren 12 Produzentengruppen ist inzwischen biozertifiziert nach USDA-Standard.

Soziales: Nicht nur die gemeinsame Geschichte, sondern auch der gemeinsam Erfolg schweißen zusammen. Die Haushalte der Akha und Lisaw umfassen nicht selten generationenübergreifend bis zu 20 Personen. Eine verbesserte Einkommenssituation durch den Kaffeeanbau unterbindet auch die Abwanderung der jüngeren Bevölkerungsgruppen. Eine gesunde Bevölkerungsstruktur benötigt soziale Infrastruktur, die bislang fehlte. Den Anfang machte die selbst finanzierte Kaffee-Akademie. Schulen und eine Gesundheitsstation stehen als Zukunftsprojekte oben auf der Agenda.

Erfolg macht auch selbstbewusst, stärkt die Identifikation mit der eigenen Kultur und trägt damit zu deren Erhalt bei. Die Akha und Lisu zeigen eindrucksvoll, wie sich Tradition und Moderne harmonisch verbinden lassen.

Hill tribes in the Golden Triangle ( the tri border region of Thailand Laos and Myanmar) were once cultivating opium as a cash crop.

In 1984, with the encouragement of the Thai monarch, King Bhumibol, they switched to Arabica Coffee.

So successful was this initiative that some of the best coffees in the world are to be found growing in this region.

In Doi Chaang or Elephant Mountain in Northern Thailand, the Akha hill tribe have been a role model for successfully cultivating, processing and marketing of their coffee worldwide.

Here, in the cool highlands, amidst pear, peach and macadamia nut trees, the Arabica coffee thrives best, producing coffee cherries that have a more complex and intense flavour, low in caffeine and therefore less bitter.

The Akha hill tribes together with other hill tribes have been living along the borders of Thailand, Laos and Myanmar for the past 2000 years. Recently they have settled in Northern Thailand to avoid persecution and harassment from other neighbouring Governments.

After 20 years of successful cultivation, the Akha villagers have established themselves as independent coffee producers building their own processing, R & D facilities and marketing outlets, selling their coffee throughout Thailand, Asia and America.

Doi Chaang Coffee - Process

The growers of Doi Chang harvest coffee cherries from November to March.

Cultivation

Doi Chaang Coffee is naturally cultivated and processed in the remote Doi Chang Village of Northern Thailand. Rich fertile soil, high elevations and ample rainfall make Doi Chang Village one of the premium coffee growing regions of the world. We naturally cultivate a variety of Arabica plants under a canopy of sun-filtered plum, peach, pear and macadamia nut trees in altitudes between 1200 and 1600 metres above sea level. The fallen leaves from our various fruit and nut trees create nutritious mulch for our coffee plants, providing a subtle fruit and nutty taste to our coffee. The shade and high altitudes slow the growth of our coffee cherries, creating a more complex, dense and intensely flavoured bean.

Harvesting
Our cherry flowers begin to bloom in February and the cherry fruit is ready for harvesting from November to March. Selectively hand picking only our ripe cherries ensures minimal damage to our plants and that only our best cherries are processed.

Extraction
First, we pre-wash our cherries in a tank of fresh spring water where all our ripe cherries will sink to the bottom and any unripe cherries will float to the top and be removed. Second, we remove the skin and pulp by putting our cherries through a pulping machine. Third, our beans are fermented in water for 48 hours to remove the mucilage layer and allow a series of chemical reactions to occur which enhance our coffee's aromatic and flavour qualities. Finally, we thoroughly hand wash our beans with fresh flowing spring water to remove all traces of the mucilage and prepare the beans for drying. All the mucilage and fermented byproducts will be recycled as fertilizer for the coffee plants.

Fully Wet-Method Processing
This labour intensive traditional processing method washes and flushes the bean from its fruit. Although time consuming, the wet-method helps maintain the inherent qualities of our beans.

Drying
We evenly spread our parchment-covered beans on patios to naturally sun dry over the next seven to eight days. During this time we continuously hand rake and re-spread our beans to ensure they fully dry. In the evenings we pile up and cover the beans to protect them from moisture. Once our beans are dried to an 11% moisture level they are warehoused until we need them for roasting.

Hulling & Sorting

This final stage of processing is done just prior to roasting. Our coffee beans are removed from the final parchment layer with the use of a hulling machine. The coffee beans are initially sorted and graded by shaking the beans through different sized sieves and then hand selected to ensure only the finest grade beans are roasted.

Under the structure of Doi Chaang Coffee Company, our farmers enjoy a carried position in what is essentially an equal partnership.

First, the farmers are paid in excess of the price recommended by the Fair Trade Organization for their green beans. And they retain 100% of the proceeds from the sale of their beans. Second, in appreciation of the value of their contribution to the venture and the desire to improve the Thai farmers' living standards, the Canadian group "gifted" the Thai farmers a carried 50% interest of the Canadian company, Doi Chaang Coffee Company.

Over the next five years, annual coffee production is projected to increase to 4,000 tons, of which approximately 60% (2400 tons) of production will qualify as Premium Grade A beans and 5% (200 tons) will qualify as Peaberry beans.

I was recently given the opportunity to try coffee from the Doi Chaang Coffee Company out of Vancouver British Columbia. This is a very unique company as it is the grower, roaster and marketer of the coffee.

“Doi Chaang Coffee produced by the hillside Akha tribe of Northern Thailand in Doi Chaang is Certified Organic, high altitude and shade grown, hand picked, fresh-water washed, sun dried and in all aspects cultivated with the sustainable farming practices of the 900 family co-operative that owns the coffee growing and processing operations. It is we believe, the only coffee (from anywhere) that from grower to seller is the same entity.”

This coffee has received great reviews and on the 100-point review (much like those in the wine and beer industry) conducted by Kenneth Davids it received 90 points on the Medium roast and 93 points on the Peaberry roast.

I received the Single-Origin Signature and the Single-Origin Peaberry roasts. I have at this time only tried the Peaberry roast and I found that it was amazing. I was really impressed with the earthy flavor. I am looking forward to sampling the Signature roast as well.

The Merchants of Green Coffee believe a truly fresh cup of coffee is the cat's meow -- among other things. Co-CEO Derek Zavislake banters about brew with Sarah B. Hood.

Q Is Toronto a coffee city?
A Not compared to others. San Francisco has something special. So do Seattle, Vancouver, Montreal. Torontonians are growing in appreciation, and in certain areas it's always been there. Little Italy, the Ethiopian community.

Q Why should people buy green coffee instead of pre-roasted beans?
A There is no better coffee than freshly roasted coffee. Green coffee beans stay fresh for years, but they only stay fresh for roughly five days from the date of roasting. It's like freshly baked bread. You can use very simple tools; you can do it by putting green coffee on a cookie sheet in your own oven at 450 degrees.

Q Do you sell regular roasted coffee, too?
A It is a working cafe, so you can get cups of coffee. We also sell unique or hard-to-find brewing tools like roasters, Ethiopian brewers and German hand coffee grinders. People can order custom-roasted coffee; you can choose specialized blends and pick your own country. We were the first licensed importer of Fair Trade coffee in North America.

Q And what about civet coffee?
A Civet coffee has been around for a very long time; the civet cat eats the very ripest berries, and people discovered the coffee beans in their droppings acquire a unique flavour from an enzyme in the cats' bodies. They now put the cats in cages so they don't have to go searching for the little tiny mounds in the rain forest. But if the cat is in a cage, it doesn't get to pick from the whole of the 3,000 beans on the tree.
We've found a supplier in Thailand that will never put the cats in cages. This is the most limited supply of civet coffee in the world, less than 100 pounds. We've had chefs and sommeliers tasting it, and we were able to do a sampling with Jane Goodall. It's arriving this fall.

Q Besides the retail shop, where does your coffee go?
A We created a custom blend for the new Chef's House restaurant at George Brown. We supply the Jamie Kennedy restaurants and F'coffee, our neighbourhood cafe. The Healthy Butcher uses only beans roasted by us. And we [did] the David Suzuki dinner [a $250-a-plate benefit for Ontario greenbelt farmers on Sept. 20 at Michael Stadtlander's Eigensinn Farm]. We will definitely be serving our solar-dried coffee, the most sustainable coffee in the world, and the only coffee that has achieved Environment Canada's seal of sustainability.
